  • Pickled Fish Recipe

    Last year i made this pickled fish for Easter...it was DELISH! and my family absolutely loved it, Try the recipe yourself and do let me know what you think :) Ingerdients: 1/2 cup vegetable oil for frying 900g -1kg Kingklip or Deep sea hake, cut into 150g portions salt to taste 2 large white onions, peeled and sliced into rings 2 cloves garlic, chopped 8 whole black peppercorns 2 teaspoons allspice 3 bay leaves 1 red chili pepper, seeded and sliced lengthwise 2 cups red wine vinegar 1/2 cup water 1/2 cup packed brown sugar, or to taste 2 tablespoons curry powder 1 teaspoon ground turmeric 2 teaspoons ground cumin 2 teaspoons ground coriander Prep Time 30 minutes Cook Time 1 hour Ready in 1 Day Heat the oil in a large pan over medium-high heat. Season the fish with salt and place in the skillet. Fry on both sides until fish is browned and cooked through. Remove from the skillet and set aside. Fry the onions and garlic in the same pan over medium heat until translucent. Add the peppercorns, allspice, bay leaves, and red chili peppers. Pour in the vinegar and water and bring to a boil. Stir in the brown sugar until dissolved. Season with curry powder, turmeric, cumin and coriander. Taste and adjust the sweetness if desired. Layer pieces of fish and the pickling mixture in a serving dish. Pour the liquid over until the top layer is covered. Allow to cool then cover and refrigerate for at least 24 hours before serving.

  • This Recipe Will Change The Way You Feel About Lamb!

    Roasting lamb is just as easy, if not easier, than roasting a chicken. Seriously, all you need to do is rub lamb shoulder with a mixture of fresh herbs, garlic, and olive oil and throw it in the oven for an hour or so. Bonus points if you roast the meat on top of a bed of potatoes. (And why wouldn't you?) What should you serve with this? Since you already have your meat and carbs covered, all you really need is a veggie side. We suggest roasted asparagus or honey-glazed carrots. Recipe: Yields: 4-6 servings Prep Time: 15 mins Total Time: 1 hour 30 mins Ingredients 900 g boneless lamb shoulder roast, tied with butcher's twine 4 cloves garlic, crushed 1 tbsp. freshly chopped rosemary 2 tsp. fresh thyme leaves 3 tbsp. extra-virgin olive oil, divided salt Freshly ground black pepper 900 g baby potatoes, halved if large Directions Preheat oven to 240ºC (220ºC fan) and place oven rack in lower third of oven. In a small bowl, mix together garlic, rosemary, thyme, and 1 tablespoon oil and season generously with salt and pepper. Rub all over lamb. In a baking dish, toss potatoes with remaining oil and season with more salt and pepper. Place lamb on top of potatoes and roast until internal temperature reaches 145ºC, about 1 hour.

  • Cape Town in the dark until Thursday. 

    Capetonians are advised to prepare themselves for another dark week as Eskom has announced their emergency diesel reserves remain depleted going into Monday, February 3. The first bout of Stage 2 load shedding will take place from 9am on Monday, lasting until 6am on Tuesday. The same 21-hour cycle will be in place for the remainder of Tuesday and Wednesday, before coming to an end on the morning of Thursday, February 6.

  • South Africa could face a shortage of red meat due to Eastern Cape drought

    Due to the severe drought that is devastating the Eastern Cape, South Africa could face a severe shortage of red meat. The Eastern Cape department of rural development has released R74 million in drought relief funding. Speaking to Joanne Joseph, Agri Eastern Cape president Doug Stern says the province carries the third of the countries livestock numbers in cattle, sheep and goats.
